Chinese cuisine, with its emphasis on vegetables and grains and small quantities of meat, is very healthy. Furthermore, Chinese cooking methods such as steaming and stir-frying preserve the vitamins in foods. With its miles of coastline, fish features prominently in Chinese cuisine. In Chinese cooking it is important that the fish be as fresh as possible. Steaming is a popular method of cooking fish, as is clear-simmering, a process whereby the fish is cooked directly in boiling water (instead of a steamer). Two other cooking methods are braising and deep-frying.

One sight that often disturbs western sensibilities is the sight of a fish being served whole, including the head. Cookbook author Ken Hom points out that the Chinese believe cooking the fish whole helps it retain its shape and flavor. Furthermore, serving a fish whole is a symbol of prosperity. Given the important role food plays in Chinese culture, it is not surprising that many foods have symbolic meaning. In fact, at a banquet it is customary to serve the whole fish last, pointed toward the guest of honor. Part of the symbolism of fish comes from the fact that the Chinese word for fish, yu, sounds like the word for riches or abundance, and it is believed that eating fish will help your wishes come true in the year to come.

Bien, me he duchado, he comido una manzana y voy por el segundo vaso de zumo de piña y uva. En la cena me lo he pasado bien; algunos reencuentros son siempre entrañables, aunque es una lástima que faltase alguna gente a la que hace tiempo que no veo. Además, como cada vez que salgo –y especialmente por ambientes que no me agradan especialmente- me he encontrado con vari+s conocid+s. En términos generales ese tipo de conversaciones de madrugada de sábado suelen ser estúpidas a la par que absurdas. Por suerte eso no ha ocurrido hoy.

Por cierto, me gusta la ciudad cubierta de niebla.
